Carolina Chicken

Ingredients

Instructions

  1. Simmer the chicken in the water with the onion, celery, parsley, salt, and pepper.
  2. When the meat is cooked, remove it from the broth, take the meat off the bones, and cube it.
  3. Spread the chicken in a 13"x9"x2" pan. Add any other vegetables you want.
  4. Sprinkle the diced eggs on top.
  5. Make a white sauce with the broth
  6. Pour the white sauce over the chicken
  7. Make pastry dough
  8. Roll the dough out into one large rectangle and place over the chicken mixture, seal edges, and cut slits in the middle.
  9. Bake at 375°F for 45 min.

Theory of the Dish

This recipe came from my sister Francesca. Fran says, "When I make it I tend to put in lots of veggies now and omit the eggs. Anything with piecrust is good :)"
