Chinese Chicken Salad (Tai Fun Chicken)

Ingredients

• 3-5 lb cooked chicken

• 1/4 Vinegar
• 2T Sugar
• 1/8 c Soy Sauce
• 1t Ginger
• 1t Sesame Oil

• Lettuce
• Fried Rice Noodles (or uncooked Raman Noodles, or Chow Mein Noodles)
• Slivered Almonds
• Mandarin Orange Slices

Instructions

1. Marinate the chicken in the sauce.
2. Make a bed of lettuce on each plate,
3. Put the chicken on the lettuce,
4. Sprinkle noodles, mandarin oranges slices, and almonds over the chicken.

Theory of the Dish

I got this recipe from my sister Francesca. When I make this just for myself I put the chicken and topping on a single lettuce leaf, roll it up, and eat it like a wrap. This would be great in a wrap too. A good cool summer meal.
