Zahdé's Genyooin Klatchian Curry
This is my recipe based on the recipe in "Nanny Ogg's Cookbook" by Terry Pratchett.
Ingredients
- 2 Tbsp vegetable oil
- 2 tsp mustard seeds
- 1 tsp each ginger, cumin, coriander, and curry powder
- 1/2 tsp turmeric
- 3 boneless skinless chicken breasts, cubed
- 1 lg onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 rutabaga (or 2 turnips), chopped
- 1 lg crown broccoli, broken into florets
- 1 can (13.5oz) coconut milk
- 1 box (10oz) frozen peas
- 1 cup sultanas (or raisins)
- salt and pepper to taste
Instructions
Clean and chop all the vegetables, and the chicken breasts
Heat the vegetable oil in a large heavy pot. Add the mustard seed and stir till it starts to pop. Add the onions and garlic and sauté. Add the rest of the spices and the chicken. Brown the chicken. Stir in the rest of the ingredients and cook on medium heat till done.
Serve with brown basmati rice.
(1 cup of dry rice, cooked in about 4 cups of water, I started with 2 cups and kept adding till it was done) I mixed the rice in with the curry before serving.
