Dad's Molasses Cake
Ingredients
- 1 Tbsp vinegar
- 3/4 c milk
- 1/3 c butter
- 1/2 c sugar
- 1 egg
- 3/4 c dark molasses
- 2 tsp baking powder
- 1/4 tsp baking soda
- Dash of salt
- 2 tsp ginger
- 1 tsp cinnamon
- 1/4 tsp cloves
- 2 c flour
Instructions
- Preheat oven to 350°F
- Grease 8"x8" pan
- Add Vinegar to milk and set aside to curdle
- Cream butter with sugar.
- Whip in the egg until fluffy.
- Add molasses.
- Gradually add the dry ingredients, alternating with the curdled milk until everything is mixed in.
- Spread in the pan
- Bake for 45-50 minutes, until done.
Theory of the Dish
This is something my dad used to make when I was a kid. It is the most amazing cake! Good in winter when you want something to stick to your ribs. He called it Gingerbread. But I think of gingerbread as those hard flat cookies shaped like little men. This is a dense moist cake.
