Zucchini Bread

Ingredients

• 2 c sugar
• 3/4 c butter or margarine
• 3 eggs
• 2-3 c grated zucchini
• 2 tsp vanilla
• 1 tsp baking powder
• 1 tsp cinnamon
• 1/2 tsp salt
• 3 c flour
optional
• 1 c nuts
• 1 c raisins
• 1/2 tsp nutmeg
• 1/2 c coconut

Instructions

1. Preheat oven to 350°F
2. Cream butter and sugar.
3. Mix in eggs.
4. Add everything else.
5. Scrape into a buttered bread pan.
6. Bake at 350°F for 15 min then reduce to 325°F and continue baking for 20-30 min until done.
