| Crusty Scalloped Corn Ingredients: 1 1/4 c or 300mL saltine crackers, crushed 1/2 c or 125 mL margarine, melted 1 T or 15 mL onion, finely chopped 3 T or 50 mL green pepper, finely chopped 2 T or 30 mL margarine, to saute 2 T or 30 mL flour 1/2 t or 2 mL salt 1 t or 5 mL sugar 1 c or 250 mL milk 1 can (303) whole kernal corn (including liquid) 2 eggs Directions: 1. Preheat oven to 200C or 400F. 2. Combine crumbs and melted margarine. Reserve 125 mL (approx half) for topping. 3. Press crumbs evenly on sides and bottom of pie pan or 8x8 casserole dish. 4. Saute onion and green pepper in margarine. Blend in flour, salt, and sugar. 5. Slowly add milk, cook and stir til well thickened. 6. Pour in corn (including liquid) and eggs, stri well. 7. Pour corn mixture into crumb crust. Top with remaining crumbs (you may use more). 8. Bake 30 minutes or until knife inserted off-center comes out clean. Serves 4 |
