Ramens, Sandwiches and Others Sean's Post-postmodern Nonsense This section include a set of dishes that fit into what an Italian restaurant would categorize as a Secondi: various stuffed shells and so forth. In Asian culinary traditions, Japanese in particular, Ramen noodles have a similar function. This is equally true for lunch and dinner sandwiches such as hamburgers in Traditional American cuisine. The point of such dishes is that they may constitute a full meal when time is precious. On the other hand, they may serve as an introduction to the main course in a formal setting. In my case, I have tried to make these dishes nutritious, practical, and sort of "savoir faire". Color and visual fluidity are very important, even when we have other pressing matters on our minds.
