Spinach Chicken Salad with Brown Sauce Sean's Post-postmodern Nonsense
This dish is the perfect combination of Eastern and Western cooking. The chicken breast was first GRILLED, and it slightly retains the amazing BBQ smell. The coating is part soy sauce, part olive oil, scallions, sugar, milk, and flour. The carrots and red cabbage are first cooked in olive oil and balsamic vinegar and mixed with the chicken later; this makes the veggies less chewy and more smooth. Finally fresh spinach is added in the pot. So in fact it is a HOT salad. With a touch of freshly grounded pepper beans, this dish was first cooked by yours truly at around 10PM one day after a long day of hunger at the lab. The first bite was SO exquisite, I was about to have a heart attack. Sassily delicious, easy on the eyes, very nutritious, definitely a keeper. Copyright Sean Luo, 2005, sluox@yahoo.com
