Cheesecake Supreme!
1 1/2 C Sugar
1/2 C Butter or Margarine
3 8 oz. pkgs. Cream Cheese
11/4 C Sugar
1 tsp Vanilla
2 Tbs Flour
2 Eggs
1 Egg Yolk
1/4 C Milk

Intructions

For crust: combine crushed crackers, nuts, and cinnamon. Stir in margarine or butter. Press mixture onto bottom and about 2 inches up sides of an 8- or 9-inch springform pan.

In a large bowl, combine cream cheese, sugar, flour, and vanilla. Beat (by hand or electric mixer) til fluffy. Add eggs and yolk (alt: 3 whole eggs or 4 egg whites work just as well) all at once, and beat (low speed on electric mixer recommended) until combined. Stir in milk.

Pour into crust-lined pan. Place on a shallow baking pan or baking sheet in oven. Bake at 375oF for 45 to 50 minutes for the 8-inch pan (35 to 40 minutes for the 9-inch pan) or until it appears nearly set when shaken. Cool 15 minutes. Loosen crust from from sides of pan. Cool for 30 minutes more; remove sides of pan. Cool completely. Chill at least 4 hours.

Serve plain or with your favorite fruit topping. Makes 12 to 16 servings
