Tea Sandwiches

These are fairly easy to make. You just need a variety of bread, like white, pumpernickel, sourdough, etc., some small cookie cutter shapes, a sharp knife, and various fillings.

This is a versatile appetizer - you can use virtually any type of filling you desire. For the holiday dinner party, I used a version of egg salad for filling, as well as some mango chutney. Below are some filling recipes you might want to consider. Be sure that the bread you use is sliced thin for best results.

Shrimp & Cream Cheese
Combine the following ingredients well & spread over bread. The preferred choice is white bread
1/2 C Cream Cheese - whipped
1 Can Shrimp (4 1/2 oz.) - drained & finedly chopped
2 Tbs chives, fresh - finely chopped
1/4 tsp Black Pepper

Egg Salad:
Combine the following ingredients well & spread over bread. Any bread type is good with this filling.
2 Eggs
1 C Watercress - stemmed and finely chopped
2 Tbs Mayonnaise
1/4 tsp Salt
1/8 tsp Black Pepper

Make approx. 30 sandwiches
