This is a great dish to put together when you want tasty food fast. You can vary the amount of hot pepper used, depending on the degree of heat shielding in your tummy. If you've prepared the burritos too hot, use some sour cream when serving and/or have ice cream for dessert. Milk based foods help neutralize the heat in your mouth.

Ingredients (Serves 4 as an entree)

  • 1 package dried refried beans OR 2 cups whole refried beans
  • 1 tablespoon olive oil
  • 1/2 green pepper, chopped
  • 1 medium onion, chopped
  • 2 small tomatoes, seeded and chopped
  • 2 red chili peppers, chopped
  • 1 teaspoon cumin powder
  • 1 tablespoon fresh coriander, chopped
  • juice of half a lime
  • fresh ground pepper to taste
  • 8 medium sized tortillas
  • 1 cup old cheddar cheese, shredded

Instructions for Veggie Burritos

Preheat oven to 350 degrees F. Preparation time: 25 minutes

Prepare the refried beans as directed on the package. Set aside.

Heat frying pan on medium heat, add olive oil.

Add green pepper and onion. Sauté until the onions become translucent.

Add tomatoes, chili peppers, cumin, coriander and lime juice. Sauté for five minutes, adding fresh ground pepper near the end. Set aside when done.

Place equal amounts of refried beans in the center of each tortilla. Roll the tortilla to form a burrito shape (tube). Place side by side in a baking dish large enough to hold all 8 burritos.

Spread vegetable mixture over top of burritos.

Sprinkle shredded cheese over burritos.

Bake at 350 degrees F for 15 minutes, or until cheese is browned and bubbling.

Serve immediately.
