Dinah's Kitchen

These recipes were given to me by my cousin Diane.
She has a lot of my grandmothers old recipes (and I do mean old)!!
As she sends them to me I will be posting more of them. I know some of these recipes are 50 years old (I am 55), and I remember my grandmother cooking some of these on the old wood stove in the kitchen.
I hope you enjoy them as much as we did when we were kids and I would like to take this time to thank Di for letting me put them on this page and sharing them with everyone.

Thank you, Dinah. I love you.

Sliced Green Tomato Relish

0ne peck of green tomatoes, washed and sliced thin
10 onions, sliced thin
4green peppers, chopped [not to small]
kosher salt
5 lbs. of sugar
in a roasting pan [large] put in layers, starting with tomatoes,
then onions, a few green peppers......sprinkle kosher salt & sugar over the layer
and repeat till pan is full

total salt to use is one cup

Cover with a dish towel and let set over night.
Drain off excess liquid as much as possible.
Pour all the sugar over the layers and add just enough white
vinegar till you see it near the top.
Empty 2 jars of pickling spice in a cheesecloth and tie tight.
Submerge into center of the layers.
Cook till all is tender...
Wash quart jars and rinse well...
I keep a large pot of boiling water on the stove
and submerge two or 3 jars with the covers into the water
I use tongs to take one jar at a time out and fill with the
pickles.
Put cover on immediately and turn upside down..
when all your jars are filled and are upside down then
I start turning them right side up.
I listen for every one of them to pop. then I know I have a good seal.

Sounds like a lot but it really is not.

Butter Milk Gravy

2 Cups Milk
2 Cups Butter
Salt & Pepper to taste
Thicken with flour
The secret to this gravy is to use as much butter as you do milk.
Heat milk and melt butter.
Do Not Scorch Milk.
