        Grandma's Chocolate Cake

        2 cups flour
        2 eggs
        2 cups sugar
        1 cup cocoa
        1 teaspoon baking powder
        3/4 cup crisco oil
        2 teaspoons vanilla
        1 teaspoon salt
        2 cups boiling water (must be boiling)
        2 teaspoons baking soda (add to boiling water before mixing)

        Mix all ingredients (mixture will be very watery)

        Bake at 350 degrees for 35 - 40 minutes in 13x9 greased & floured pan.




        Grandma's Chocolate Cake II

        Slight Variation

        1 3/4 cups flour
        2 eggs
        2 cups sugar
        3/4 cup cocoa
        1 1/2 teaspoon baking powder
        1/2 cup crisco oil
        1 teaspoon salt
        1 cup milk 1 cup boiling water (must be boiling)
        1 1/2 teaspoons baking soda (add to boiling water before mixing)

        Mix all ingredients (mixture will be very watery)

        Bake at 350 degrees for 35 - 40 minutes in 13x9 greased & floured pan.





        Blueberry Squares

        1/2 of small tub of margarine
        4 eggs
        2 cups sugar
        Cream together until smooth
        Add...2 teaspoons vanilla
        3 cups flour
        Add 1 cup flour at a time...slowly...This batter is very thick
        1 can blueberry pie filling....DO NOT ADD.... this is to spread on batter
        Spead 1/2 of the batter on a greased baking sheet
        Spread blueberry pie filling over the layer of batter
        Now spread remaining half of the batter on top of blueberry pie filling. It is okay if it is not completely covered.

        Bake at 350 for approximately 30 - 35 minutes.
        Let cool before cutting.




        Tea Cake


        1/2 cup butter
        1 cup sugar
        2 eggs
        1/2 cup milk
        1 1/2 cups flour
        2 teaspoons baking powder
        1/2 teaspoon cinnamon
        1 teaspoon vanilla

        Mix together
        Put in cookie sheet (with edges-like a jelly roll pan). Size should be 10 X 15 baking sheet.
        Cover top with 1/4 cup sugar mixed with 2 teaspoons cinnamon, plus 3/4 cup chopped nuts
        Bake about 15 minutes in 350 degree oven



        Strawberry Shortcake


        1 3/4 cups all-purpose flour
        2 tablespoons sugar
        1 tablespoon baking powder
        1/2 teaspoon grated orange peel
        3 tablespoons unsalted butter or margarine, cut into pieces
        3/4 cup skim milk

        For the Filling

        2 pints fresh strawberries, sliced 1 tablespoon orange juice
        1 tablespoon sugar
        Vanilla nonfat yogurt and mint leaves for garnish
        1. Preheat oven 450 degrees. Spray baking sheet with vegetable cooking spray.
        2. In a large bow sift together flour, sugar and baking powder. Stir in orange peel. Using a pastry blender or 2 knives, cut the butter into the flour mixture until coarse crumbs form. Quickly stir in milk until soft dough forms.
        3. On lightly floured surface roll out doguh to a 1/2inch thickness. Using a 2 1/2 biscuit cutter, cut out biscuits. Place on baking sheet. Bake until golden about 12 - 15 minutes. Place biscuits on wire rack to cool slightly.
        4. Prepare filling. In a large bowl combine strawberries, orange juice and sugar.... Mix well
        5. Split warm biscuits in half and place bottom on plate. Top with some filling and cover with top of biscuit. Serve with remaining filling.....garnish with yogurt and mint on the side of the strawberry shortcake..




        Mom’s Best Brownies



        ½ cup cake flour, sifted
        ½ cup unsweetened cocoa powder
        ¼ teaspoon salt
        2 egg whites
        1 large egg
        ¾ cup of sugar
        6 tablespoons unsweetened applesauce
        2 tablespoons vegetable oil
        1 ½ teaspoons vanilla extract
        1 tablespoon chopped walnuts (optional)

        1. Preheat overn to 350 degrees. Spray an 8-inch square baking pan with vegetable cooking spray and set aside.
        2. In a medium bowl, combine flour cocoa, and salt. Mix well. In a large bowl, whisk together egg whites, egg, applesauce, oil and vanilla. Stir in flour mixture until just blended; DO NOT over mix. Pour batter into prepared pan; sprinkle with walnuts.
        3. Bake until just set and a toothpick inserted in center comes out clean, about 25 minutes.
        4. Place pan on wire rack and cool for at least 15 minutes. Cut brownies into squares and place on a serving plate.




        Eclair Cake


        2 small packages instant vanilla pudding
        3 ½ cups milk
        1 9 oz, cool whip or 2 pkgs. Dream whip made up to directions on pkg.
        1 lb. Box graham crackers

        Butter bottom of 9x13 pan and line with whole graham crackers
        Prepare pudding mix with milk; beat at medium speed about 2 minutes
        Add cool whip
        Pour ½ mixture over crackers. Add another layer of crackers
        Add rest of pudding; cover with crackers
        Refrigerate for about 2 hours…. Then frost with frosting

        Icing

        2 1 0z. unsweetened premelted chocolate
        2 tsp. Light corn syrup
        2 tsp. Vanilla
        3 Tbs. Oleo, softened
        1 ½ cup confectioners sugar
        3 Tbs. Milk

        Mix all ingredients, beat until smooth.
        Spread over cake and refrigerate 24 hours

        Serve and Enjoy
