Daddy's Salad
Ingredients
In a large salad bowl, place: (fill the bowl)
Iceberg Lettuce (tear lettuce, do not cut it)
Any vegetable you choose.
Suggestions:
Cauliflower (cut into small pieces)
Cucumber (peeled, cut in half, and sliced)
Avocado (cut into small pieces)
Bell pepper (cut into small pieces; use green, red, or yellow pepper)
Tomatoes (cut into bite sized pieces)
Croutons or bacon bits (fresh bacon is best)
Dressing (add directly onto salad)
Salt to taste
Black pepper to taste
3 Tbs. Vegetable oil
1 and 1/2 - 2 Tbs. Vinegar (salad or wine vinegar)
Serves about 6 to 8 or more depending on the size of your large salad bowl.
Adjust the dressing amounts accordingly.
This salad goes well with most any meal.
Spinach Salad
Ingredients
1 package of spinach (washed, de-veined, and broken into bite sized pieces)
4 hard-boiled eggs (chopped fine)
8 stripes of bacon (fried crisp and crumbled)
1/2 to 1 pound (8oz to 16oz) sliced mushrooms (optional)
Layer spinach, eggs, bacon, and mushrooms in a large salad bowl (or in individual salad bowls if you prefer).
Dressing
In a separate bowl, mix together:
1 cup of vegetable oil
5 Tbs. Wine vinegar
4 Tbs. Sour cream
1 and 1/2 tsp. Salt
1/2 tsp. Dry mustard
2 Tbs. Sugar
2 Tbs. Chopped parsley (or dried parsley flakes)
2 cloves garlic (crushed-may also use about 1/8th tsp. pre crushed garlic)
Coarsely ground black pepper (or freshly ground black pepper-about 1/8th tsp.)
Pour the mixed dressing over the salad, toss, and serve.
Serves about 8 people.
This salad is good with almost any meal.
Romaine Salad with Blue Cheese Dressing
Dressing
1/3rd— (2 Tbs. or 1oz.) Block of Blue cheese
1/3rd cup oil (vegetable oil is best, but most any will do)
2 Tbs. Wine vinegar
1/2 tsp. Salt
1/8th tsp. Ground pepper (freshly ground is best)
Place dressing contents in the bottom of a large salad bowl, and mash the blue cheese until well blended, creamy, and smooth.
Salad Contents
Romaine lettuce, de-veined and cut
Large pitted black olives (cut into quarters)
Scallion (or green) onions
Layer the Romaine, olives, and scallions in the large salad bowl with the dressing, then toss and serve.
Serves about 6 people.
The recipe can be reduced or enlarged as needed.
This salad goes well with steak dinners and Italian dinners.
