Sweet Potato Biscuits

1 1/2 cups all-purpose flour 1/2 cup cold shortening
2 tsp baking powder 1 cup milk
1/2 tsp salt 1 1/2 cups mashed cooked sweet potatoes
Combine flour, baking powder, and salt in a medium mixing bowl; cut in shortening until mixture resembles course meal. Combine milk and sweet potatoes, mixing well; add to flour mixture and stir quickly. Turn dough out on a lightly floured surface and knead lightly. Roll to 1/2-inch thickness; cut with a floured biscuit cutter. Place on greased baking sheets and bake at 425º for 12 to 15 minutes. Yield: about 2 dozen.

Note: For sweeter biscuits, add a little sugar and a few drops of vanilla extract to the dough.
