Name of dish: Melacca Chicken Rice

Ingredients:

1 whole chicken
2 tsps salt
1 tsp sesame oil

(A)
2 tbsps margarine
1 clove garlic
4 bowls of rice
1 & 1/2 tbsps chicken powder
5 & 1/2 bowls water

Sauce:
3 tbsps soya sauce
1 tsp sesame oil
1 tsp black soya sauce
chicken stock

Chilli Sauce (Blended):
150g red chillis
10 chilli padis
50g young ginger
50g garlic
juice of 10 small limes
peel of 2 limes
salt to taste
chicken stock to taste

Methods:

1) Boil ingredients until cooked, remove chicken and rub sesame oil on skin.
2) Stir fry garlic and rice in margarine, add in chicken powder stir fry evenly. Pour in water and bring to boil.
3) When strong steam appears, reduce to low heat and boil for 10 minutes.
4) Remove rice and press into small balls. Cut chicken into small pieces and pour sauce on top. Serve with chilli sauce.

Tip: Knead the rice while still hot, otherwise it will be difficult to make balls.
