Name of dish: Grilled Fish

Ingredients:

600g fresh fish

Seasoning
1 tsp salt
1 tbsp sugar
juice of 3 small onions
juice of 1 stalk serai
2 tbsps curry powder

Methods:

1) Rub seasoning oil all over fish and marinate for 1 hour.

2) Heat oil in pan, fry both sides of fish until golden brown and serve with Grill Fish Sauce. (recipe for the sauce is below)

Tip: Do not marinate fish for too long, otherwise fish meat will become soft and tasteless.

Grill Fish Sauce

Ingredients:			(A)
1 tbsp fine shrimp sauce	lime juice to taste
1 tbsp fish gravy
2 tbsps sugar
2 tbsps plum sauce
5 small onions (sliced)
2 tbsps white vinegar
2 red chillies (chopped)
3 chilli padis (chopped)
1 & 1/2 cups water

Method:

1) Boil ingredients and leave to cool. When ready to serve, add in lime juice.

Tip: Before adding the lime juice, the grilled fish sauce must be chilled, otherwise it will become bitter.
