Name of dish: Mutton Curry
Ingredients:
1 kg mutton
1/2 kg potatoes
3 small tomatoes
3 red chillis
3 green chillies
sugar to taste
salt to taste
1 cup water
(A) Pounded ingredients:
2 stalks serai 10 small onions
2 stalks curry leaves 5 cloves garlic
1 tsp jintan putih 3 buah keras
1 tsp jintan manis 2 tbsps chilli boh
1 tsp ketumbar seed powder 5 tbsps curry powder
3 star anises 1/2 tsp kunyit powder
1 pc 2" cinnamon bark 3 slices ginger
Methods:
1) Heat 1/2 bowl oil in wok, stir fry (A) and pounded ingredients until fragrant. Add in all the ingredients and cover to cook.
2) Cook until mutton becomes soft. Remove and serve.
Tip: Cook mutton in 500ml water and 2 slices of asam keping can remove the unpleasant smell of mutton.
