Esbats
There are many things to do during an Esbat ritual. I like a less formal Esbat, so I may just cast my circle and use a simple invocation. The minimum you should do when communing with spirits is to ground, center and ask for protection. Remember, what you invoke you must devoke.

Esbats are the full moon nights. There is no standard rituals for the Esbats. Some take this time for meditation, spell work, divination or other Craft related activities. The point is to stop and take notice of the changes in the earth from month to month. To use the moons influences in magick, spells to draw energy towards you should be done during the waxing moon. Spells to banish are done during the waning moon. The full moon is good for any kind of spellcraft.  There should be no magick done during the new moon. This is a time of rest.
Different traditions give different names for each month. The changes in the climate where I live (down South) are very different then in other places, so I changed the names of the Esbats to fit my climate while trying to stay close to their traditional names.
