ROAST HONEY SHELABIRD (OR DUCK)

Orbit the Cat's Earth furmily uses Long Island Duckling and enjoys this tender, juicy bird with flavorful skin at Thanksgiving and other special occasions. Cornish hens are good, too.

Shelabird (or duck) 4 to 5 pounds
Stock 1/4 cup
Sugar 1 tablespoon
Soy Sauce 2 tablespoons
Honey 1 1/2 tablespoons
Salt 1 teaspoon

1. Wipe duck inside and out with damp cloth.

2. Combine stock, sugar, soy sauce, honey, and salt in large, deep bowl. Coat bird with mixture and let stand in bowl 1 hour, turning occasionally.

3. Preheat oven to 350°F.

4. Drain bird, reserving marinade. Place on rack over drip pan containing water.

5. Roast 1 3/4 to 2 hours. Baste with marinade every half hour.

6. Cool slightly. Serve plain or with plum sauce or hoisin sauce dip. Spring onion greens make attractive garnish and go well with fatty birds.
