11/2 litres of water
750g mince
4 beef cubes
1 onion (chopped and fried)
1 teaspoon curry
1 teaspoon nutmeg
1 teaspoon pepper
1 tablespoon salt
Boil ingredients for 1/2 - 3/4 hr set aside to cool.
200g butter
400g plain flour
Melt butter, add flour slowly mixing together.
Add meat mixture. Bamix together. Allow to cool.
Roll into shape, roll in breadcrumbs.
Roll through egg mix (1 cup milk , 2 eggs, 1 tablespoon oil), then through breadcrumbs again.
Deep fry in hot oil for about five minutes or until golden brown and crunchy. Unfried croquettes can be frozen until needed.
Fry bacon and onion together until golden. Mix all ingredients together until well blended. Bake in a well greased 8 inch deep sided tin at 180oC until set, about 30 mins. Alternative to bacon: salmon, tuna, mixed vegetables, mushrooms or anything you fancy (including leftovers). Things like mushrooms or capsicum are nicer when fried with the bacon and onion.
This can be cut up into squares of any size and served with salad, or cut into finger or bite size pieces for parties. Serve hot or cold.
