Black Forest Cake


Preheat oven to 350F

6 eggs
1 cup sugar
1 teaspoon vanilla
1/2 cup flour
1/2 cup cocoa
1/2 cup Melted butter
2 cups whipping cream
1/4 cup powdered sugar
1 cup pitted sweet cherries
1 oz semi sweet chocolate
brandied syrup

Grease and flour 3, 8" pans. In a large mixer bowl, beat eggs until light and fluffy. Add sugar and vanilla. Beat at high speed until thick, about 5 minutes. Combine flour and cocoa in sifter. Gradually sift over egg mixture while very gently folding in. Stir in melted butter, 2 tablespoons at a time. Spoon into cake pans. Bake 15 to 20 minutes or until done. Cool in pan 5 minutes. Turn out on to wire racks. Cool. Prepare brandied Syrup

Brandied Syrup

3/4 cup sugar
1 cup cold water
1/4 cup cherry or orange brandy

Prick each cake. Carefully spoon syrup over cakes. Whip cream until it begins to thicken. Add powered sugar. Continue beating until thick. Place cake on serving plate; ie: 1 layer cake, 1 layer whip cream, etc. Frost sides and top. Place cherries decoratively on top. Cover with chocolate curls. Refrigerate.
