Lori's Homemade Pizza (LSm)

Sauce
1 can 29oz of chopped tomatoes
1/4 cp roughly chopped fresh oregano
1/4 cp roughly chopped fresh basil
1T olive oil
2 cloves garlic minced
1/2 med. onion diced
salt to taste

Begin with oil, garlic, onion, and spices in med saucepan on medium to high heat. When onions are translucent and garlic is brown around the edges add the tomatoes and salt. Simmer for one hour stirring occasionally.

Crust
1 cp hot water
1T dry yeast
1t sugar
3 cups flour
1cp oatmeal (optional)
2t salt
Dried Oregano, Basil, and Garlic Powder to taste

In a large mixing bowl combine the water, yeast and sugar. Wait about 10 minutes for the yeast to activate. Add flour and oatmeal and salt and spices. Knead for two minutes. You want your dough to be moist but not wet.

Use about 2t of oil to coat your dough so it won't stick to the sides of your bowl once it has raised. Cover the bowl with 2 - 3 kitchen towels and let the dough raise until it is twice its size.

Punch it down and spread it on your pizza sheet.

Pizza
1 large fresh tomato slice thinly
mushrooms sliced thinly
1 med. onion sliced thinly
Mozzarella cheese to taste

Start with the spread dough. Add sauce, cheese, then fresh toppings.

Preheat oven to 500 degrees. When oven is at temp. place pizza on the middle level in your oven. Cook for approximately 15 minutes or until your side crust are light brown.
