Kimmy's Chili
- 2 lbs. ground beef
- 1 T. salt
- 3 T. chili powder
- 1 t. ground cumin
- 2 oz. ap flour
- 1 1/4 C. tomato paste
- 1/2 lb. diced onion
- 1/2 t. black pepper
- 1 T. minced garlic
- 1/2 t. cayenne pepper
- 2 qts kidney beans (undrained)
- 1 2/3 pints water
- Cook ground beef, onion, garlic together until meat is completely cooked.
- Add to meat mixture, salt, chili powder, ground cumin, black pepper, cayenne pepper, flour.
- Add tomato paste and half the water, cook for 5 minutes, then add kidney beans and the remaining water.
- Let simmer for at least an hour, stirring occasionally.
- Optional...serve over cooked white rice
