Hawaiian Sausage and Rice
- 1 lb. Kielbasa Sausage (halved lengthwise and cut into 1" slices)
- 1 Medium Green Bell Pepper (chopped ¾" pieces)
- 1 Medium Red Bell Pepper (chopped ¾" pieces)
- 1 Can (8 oz.) Pineapple chunks in Unsweetened Juice (do not drain)
- 1 Pkg. (6.2 oz.) fast-cook long-grain and wild rice mix (with seasoning packet)
- ½ Cup Pineapple Preserves
- 2 Tbs. Butter
- 1¼ Cups Water
Pre-heat a 12" Dutch oven.
In a small pan bring the water and butter to boil.
Combine all the ingredients in the Dutch oven (including the contents of the seasoning packet) and add the boiling water and mix well and cover.
Bake for 45 minutes or until rice is tender.
Use 10 coals under the oven and 14 coals on the lid.
Let stand 10 minutes before serving.
