"Beer! It Kicks Ass!"

I have been brewing beer since January 1996. To date, I have created over a dozen different beers. Of these, I would have to say 9 have turned out REALLY good, and the other three were marginal. Not bad for a beginner, eh? One of my personal favorites was a clone of Pete's Wicked Ale. I went down to the local homebrew shop (The Wine and Hop Shop), and asked the clerk behind the counter if he was aware of a good Pete's clone recipe. His response: "Actually, a sales rep from Pete's was in here yesterday. Let's see if he left anything." Sure enough, the ingredients list was there! Of course, the actual amounts weren't given, so he made an educated guess. The bottom line is this was REALLY good stuff after only a week, and was remarkably better after 5 months, at which time it had all been consumed.


I know you're probably anxious to get your hands on this one, so without further ado, here is the recipe:

Brought 1 1/2 gallons of water to boil. Added Carapils Malt and Chocolate Malt. Boiled for 1 minute and removed grain sack. Added Gold Malt, Dry Malt, and Brewer’s Gold Hops. Boiled for 35 minutes. Added Cascade Hops and boiled an addition 2 minutes. Mixed in with 3 3/4 gallons of cold water.
O.G. reading of 1.051 (6.7%). Pitched yeast at 75°.
2 days later, racked into glass carboy. 10 days later, racked into bottling bucket and added 1 cup corn sugar. Final gravity was 1.012. Yield of 49 bottles.

Note that this beer has a little more "body" than the original Pete's - and tastes even better! If you decide to give this one a try, send me an email and let me know how it turned out!
