TOAD IN THE HOLE WITH ONION GRAVY

spray oil
eight half fat pork sausages
1 red onion sliced
100g(4oz) plain flour
4 large eggs
200ml milk

for the gravy...
2 onions sliced
pinch of sugar
4 tspns plain flour
425ml beef stock

1 sift flour and salt into a large bowl and make a well in the center add the egg and a little  milk and beat until smooth gradualy beat in the rest of the milk to make a smooth batter leave for 30 minutes to stand

pre-heat the oven to gas mark 7

3 in a large roasting tin add sausages onion and oil toss to mix and bake for 5 mins

remove sausage mix from the oven turn sausages over and add batter mix bake for 25-30 mins or until batter has risen

5 to make the gravy .....heat the oil in a medium pan until golden brown add sugar and cook over a low heat until disolved

6 add the flour  stir for 1 minute add stck slowley and simmer until thick season
