Fish

Salmon and tuna can be eaten uncooked. Both can be used for making "nigiri-zushi", sashimi and as ingredient for sushi-rolls.

Eggs from salmon,cod,trout,etc. can be used for making "gunkan-maki-zushi" and for making sushi rolled inside out. Ask the fishman if the eggs need some special preparation.
Crab-sticks
Several kinds of shell-fish can be used for making "nigiri-zushi". Ask the fishman how to prepare them.
Shell-fish
Sprinkle some salt at the bottom of a bowl. Put the fillets of mackerel in, skin down. Sprinkle the upper side with salt. Leave the mackerel for 2- 3 hours.
Ask the fishman to fillet the fish for you.
Trout
At this page several kinds of fish - and how to prepare them for sushi - are described. However, many other kinds of fish are also suitable for making sushi.
It's difficult to estimate how much fish you need for making sushi. I always buy 200 grams of fish fillets per person. When you buy whole fish you'll need more.
Tip: buy fillets of fish instead of whole fish, this saves you a lot of work!

Crab-sticks can be used for making"nigiri-zushi" (attach to the rice with a strip of nori) or as ingredient for sushi-rolls.
Depending on the size of the pieces you can use the eel for making "nigiri-zushi" (attach to the rice with a strip of nori), as ingredient for sushi-rolls and for making "hako-zushi".

Cut the eel in several pieces and grill them for a couple of minutes. Remove the pieces from the grill and let them leak out. Spread some of the mixture over the pieces and grill for another couple of minutes. (Keep spreading some mixture on while grilling). Remove the pieces from the grill and let them leak out.

Mix 1,5 table spoon mirin and 0,5 table spoon sugar
Eel
Mackerel prepared this way can be used for making"nigiri-zushi".
Wash off the salt and dab the fillets dry. Wash and dry the bowl. Put the fillets back in and pour rice vinegar over them. Leave for half an hour. Let the fillets leak out.
Mackerel looses it's freshness very quickly. To prevent that, the fish has to be salted.

Squid can also be used for making sushi. Ask the fishman how to prepare it.
Wash the shrimps under running water. Cut off the heads and put a pin through the length of the shrimps. This prevents the shrimps from curling up while cooking. Bring a large pan with water and salt to the boil. Add the shrimps. When the shrimps are floating, they are done. Immediately place them in ice-water. This stimulates the pink colour and let's the shrimps keep their shape. Let the shrimps leak out. Pull out the pins while twisting them. Peel the shrimps, but leave the tail on.

You need large shrimps for making "nigiri-zushi".
Shrimps can be used as ingredient for sushi-rolls.

You can eat trout uncooked. Ask the fishman to fillet the fish for you. You can use trout for making "nigiri-zushi" and as ingredient for sushi-rolls.
When you have doubts whether a certain kind of fish is suitable, ask the fishman for advice.
