Cat Heads and Gravy
Cat Heads Aka Biscuits
2 cups self rising flour
3 Tbls Crisco or lard
1 cup of milk or 3/4 cup of buttermilk
Put flour in large mixing bowl. Measure lard into flour.
Take a pastry cutter if your fancy...if your country, a fork will do. Cut the grease into the flour until
it resembles the size of peas. Now you are ready to add your milk. Remember the less handling of the
dough the lighter the biscuit. Stir until forms a ball. Now if you dont have a lot of time just spoon the
biscuit dough onto a greased hot cookie sheet. If you have time, roll the dough onto lightly floured surface
about 1/2 thick. Cut with biscuit cutters if your fancy...if not a glass dipped in flour will work. Place them
on cookie sheet and bake in a 400 degree, preheated oven for approx. 10 minutes. Makes bakers dozen, that is if
you dont want them to be cat heads... otherwise it makes 6 cat heads.
Kountry Milk Gravy
1lb bulk sausage hot or mild
1/4 cup flour
1 to 2 cups of milk
2 to 3 Tbls pan drippings from sausage
Brown sausage in frying pan and drain the drippings, making sure to reserve
some of the drippings for the gravy. Put sausage back in pan. Keep heat med to high. Take flour and sprinkle over the sausage. Stir and cook
for approx. 2 min. Careful not to brown the flour, unless you want brown gravy. Add milk and stir until thickened. Note, as
begins to thicken you have to turn the heat down. Serve over some hot cat heads. Feeds about 4 people.
Mater Gravy
1 medium to large " Famous Slocomb, Alabama Tomato "
(if you cant get a Slocomb tomato, you will just have to make do with your local tomatoes) Unless you are feeling
adventerous and you wanna make it to our " Famous Slocomb Tomato Festival "Sorry bout ramblin...lil southern pride ya know.
3 to 4 Slices of meat. I prefer thick bacon.
3 Tbsp of meats drippings
1/4 cup flour
1 to 2 cup of water or tomato sauce
1 good size stalk celery, finely chopped
Scallions or onions, finely chopped, (use as much as your tast buds like)
Start frying the bacon. While bacon is frying, you can peel, seed and dice tomatoes. Drain bacon on paper towels, reserve
approx. 2 to 3 Tblsp of the drippings. Add celery and onions to pan. Saute a couple minutes. Sprinkle flour over veggies and stir it up good. Add water or tomatoe sauce, stirring constantly
until thickened. Add your crumbled up bacon, salt and pepper. Yummy. Good on grits or cat heads.
