When thou saidst, Seek ye My face,
my heart said unto Thee, Thy face Lord, will I seek
Psalm 27:8

Roasted Roots

1 medium size turnip root

1 large rutabega

2 small or 1 large sweet tater

1 medium sweet onion

olive oil

salt, pepper, rosemary (dried or fresh), garlic cloves, McCormick Grill Mates (Montreal Steak)

Note: you can use your imagination on seasonings. Mrs. Dash is good also.

Prep: Wash, Peel and cube roots (1 inch). Preheat oven to 375 degrees.

Use a cookie sheet or shallow roasting pan. Put your roots in the pan and drizzle olive oil over the roots. Sprinkle the seasonings. Using a spatula mix roots, oil and seasonings. Make sure well coated. Put in oven and roast for approx. 15 minutes. Take spatula and turn the roots, spread them back evenly in pan. Put back in oven for approx. 15 minute. Add onions and garlic the last 10 minutes of cooking time. And there you have it.Yummy!!!
(cooking time varies...approx 45 min. total)

Excellent served with pork, chicken or beef.
Variation: You can add some sliced apples or pineapple when you add the onions and garlic...makes a fruity festive dish.

Variation: Add fresh brussel sprouts. Wash the brussel sprouts and on the bottom of the head score a cross. Put them with the roots at the beginning of cooking time. This is good variation. The cross scored in the bottom helps them to cook, as they are slower to cook. Make sure you get a good coat of olive oil.

Hope you enjoy...this is one of my families favorites. Kat
