Intoxicated Pork

	5	lb center cut boneless pork loin
	3	minced garlic cloves
	   1/4	cup chopped parsley
	4	cup red cooking wine
	   1/2	tsp salt
	1	peppercorn
	2	tsp butter
	2	tsp flour

	Heat the oil in a dutch oven.  Sear the meat in the oil
	to brown on all sides.  Add the garlic, parsley, wine,
	salt and peppercorn.  Reduce heat and simmer covered
	for 3 hours.  Remove meat and reduce stock to 1/3 its
	volume.  Strain.  Heat teh butter in a smaller sauce pan.
	Add the flour and cook 2 minutes, pour in the stock and
	simmer until thicken.  Carve the pork and server with sauce
	separately.
