Pineapple Cake
1/2 cup margerine/butter
1 cup sugar
2 egg yolks
1/2 teaspoon vanilla extract
1/4 teaspoon lemon extract
2/3 cup crushed pineapple
1 3/4 cup flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 egg whites
1/4 teaspoon baking soda
Stir in baking soda to crushed pineapple and let stand while creaming
butter. Cream butter, sugar and add egg yolks, vanilla and lemon
extract. Add pineapple to butter mixture. Stir in flour sifted with
baking powder. Add salt to egg whites and beat until stiff. fold into
batter/ Bake in 8 by 8 by 2 inch pan or in a 9 inch pie pan. Bake at
350 degrees for about 40 minutes.
