Kaju Burfi


Ingredients:

3 cups Cashew powder
2 cups Sugar
0.5 cup Water
Silver foil

Method:

  1. Make sugar syrup of almost 2 thread consistency. 
  2. Then dissolve cashew powder in the solution and make the whole solution thick. 
  3. Then spread it on the plate and put some silver foil. 
  4. Then cut burfi into pieces. 

Mango Icecream


Ingredients:
1 can mango pulp (28 - 30 oz.)
4 cups whipping cream or 32 fl oz
2 cups half & half or 16 fl oz
2 cups milk or 16 fl oz
1 1/4 cup sugar
Method:
Mix all the above well. Use icecream maker for best results. Do not freeze in trays. 


Mango Lassi 


Ingredients
32 ounce container yougurt
2 cups mango pulp (fresh or canned) 
1 cup cold water
16 table spoons sugar
1teaspoon lemon juice

Method
Blend all of the above and keep refrigerated.  
When serving may add crushed ice cubes. 


Nankathai


Ingredients
1 cup shortening 
1 cup powdered sugar
2 cups all purpose flour
Pinch of nutmeg powder
1/4 tsp cardamom powder
5-6 tblsp of pista powder (optional)
Method
Mix the shortening and powdered sugar 
Gently add the flour, cardamom, nutmeg, and pista powder 
Make into small balls 
Keep on a baking sheet 2" apart and bake at 300 
degrees for about 20-30 minutes or till done.
