1 pound asparagus
1 tablespoon olive oil
Salt & pepper
¼ cup fresh Parmesan cheese,
grated
2 teaspoon balsamic vinegar
2 tablespoon chives, chopped
1. Prepare asparagus by trimming the tough ends, wash and pat dry.
2. Place asparagus in a packing dish and drizzle oil over top; shake dish to coat all asparagus.
3. Spread spears into a single layer, sprinkle with salt, pepper.
4. Cover with tin foil and bake at 400 degrees for 15 minutes until tender.
5. Remove from oven, top with Parmesan and return to oven for 2-3 minutes.
6. Remove spears to individual serving plates, sprinkle with a few drops of balsamic vinegar and chives. Makes 4 servings.
