Chicken Kiev

2 cloves garlic, finely chopped
1 teaspoon basil
1 teaspoon oregano
½ teaspoon salt
2 cups bread crumbs
½ cup margarine
8 chicken breast halves without skin
¼ cup dry white wine or vermouth
¼ cup scallion, sliced

    Preheat oven to 375F. Mix garlic, basil, oregano, and salt with bread crumbs and place on a large plate. (You can mince the garlic in a food processor, add bread slices and process until they become crumbs, then add spices and process again.) Melt ¼ cup of the margarine. Dip each chicken breast in the melted margarine, roll it in bread crumbs, and place it in a shallow baking pan. Bake near centre of oven for 50-60 minutes or until fully cooked. Melt the remaining ¼ cup margarine. Mix in wine and green onions. Pour sauce over chicken. Return chicken to oven for 3-5 minutes or until sauce is hot. Serve over rice. Makes 8 servings.
