6 fresh peaches
1/3 cup firmly packed brown peaches
¼ cup all-purpose flour
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground nutmeg
Pastry for double-crust 9-inch pie
Preheat oven to 400 degrees.
Slice peaches into mixing bowl. In another bowl, combine brown sugar, flour, cinnamon, ginger, and nutmeg; mix to blend. Add to peaches, tossing gently.
Pour filling into pastry-lined pie plate; cover with top crust and crimp edge. Cut several slits in top crust to allow steam to escape.
Bake for 10 minutes; reduce heat to 375 degrees and continue baking 45 to 55 minutes or until crust is golden and filling bubbly. Cool slightly before cutting. Makes 8 servings.
