4 ounces unsweetened chocolate
1 cup butter (2 sticks)
1 cup granulated sugar
¾ cup firmly packed brown
sugar
1 teaspoon vanilla
1 cup all-purpose flour
½ teaspoon baking powder
1 tablespoon instant espresso powder
OR
2 tablespoons very finely ground
dark coffee beans
3 eggs
Heat oven to 350 degrees. Butter an 8-inch square baking pan.
Melt chocolate and butter in medium pan over very low heat. Stir together; remove from heat. Add sugars, vanilla, flour, baking powder and espresso powder; stir thoroughly. Add eggs and mix again.
Spread mixture in prepared pan. Bake until a toothpick comes out clean, about 40 minutes. Cool before cutting.
