2 medium zucchini, sliced
1 onion, sliced and separated into
rings
2 cups or 16 ounces canned tomatoes,
drained or 3 tomatoes, sliced
1 cup celery, thinly sliced
½ of l0-ounce package of
frozen peas or green beans
Salt and pepper, to taste
1 cup milk
2 tablespoons all-purpose flour
1 cup grated cheese
Mix zucchini, onion, tomatoes, celery, peas with salt and pepper and place in 9-inch-square baking pan.
Bake at 325 degrees for 15 minutes.
Combine milk and flour and whisk until smooth. Pour over vegetables. Sprinkle cheese on top. Bake for 15 more minutes or until zucchini is tender and sauce bubbles.
Refrigerate leftovers. Makes 7 servings.
