Salmon Marinade and Baste

½ cup butter at room temperature (1 stick)
4 cloves garlic, minced
1 large shallot, minced
Juice of a lemon or lime
1 tablespoon dry white wine
Salt and pepper to taste
Fresh basil (optional)
Fresh dill (optional)
2 pounds salmon, fillet or steaks

    Mix butter, garlic, shallot, lemon or lime juice, white wine, salt and pepper, basil or dill if used, in a large bowl. Marinate the salmon in the mixture for at least one hour, then grill over medium heat, (skin side down if fillet), basting with the marinade. Cook the salmon for a total of 10-15 minutes per inch of thickness. Do not turn. Makes 4 servings.
