Indonesian Chicken Curry


Ingredients:

1 Kg Chicken (cut it into pieces)
4 eggs
6 baby potatoes
1 cup plain flour
1 large tomato (divided into 4)
3 glasses of water
1 glass of thick coconut milk
3/4 tblspn very mild curry powder
1 whole garlic
2 shallots
2 cups of vegetable oil
A pinch of salt


Cooking Method:

  1. Boil the baby potatoes, being careful not to let them go mushy!

  2. Hard-boil the eggs.

  3. Liquidize the garlic.

  4. Dice the shallots.

  5. Wash the chicken pieces and dry them with kitchen roll, then roll them on the flour.

  6. Heat the oil in a frying pan.

  7. Put the chicken into the oil and fry until golden brown.

  8. Remove the chicken from the pan and let it cool.

  9. Fry the eggs.

  10. Remove the eggs from the pan and let them cool.

  11. Fry the boiled potatoes.

  12. Pour the used oil through a sieve.

  13. Reheat 6 tablespoons of the oil in the frying pan.

  14. Fry the diced shallots until you can smell the aroma.

  15. Put the garlic into the frying pan with the shallots.

  16. Put the chicken, the eggs, and the potatoes into the frying pan with the garlic and shallots. Stir it up.

  17. Pour 3 glasses of water into the frying pan.

  18. Close the lid of the frying pan and leave it to cook on a medium heat for 10 minutes.

  19. Open the lid and pour in the coconut milk, the tomatoes, and the salt.

  20. Turn the heat down, close the lid again, and allow it to boil until the meat is tender.

  21. Serve the finished dish with rice.
