Mussle Satay


Ingredients:

1/2 a small pineapple
1 large lime
Tomato sauce
Shelled and skinned peanuts
1 Kg medium-sized mussles
1 whole garlic
1 tsp of sugar
1 tsp salt
1 small root of ginger
Assam
Sweet soy sauce (preferrably Indonesian)
Malt vinegar
Several wooden kebab skewers


Cooking Method:

There are two parts to this recipe - the first is to make the sweet and sour sauce; the last is to cook the mussle satays themselves.

Making the Sweet and Sour Sauce

  1. Fry the peanuts.

  2. Ground the peanuts finely.

  3. Mix the peanuts with some tomato sauce.

  4. Grate the pineapple.

  5. Mix some of the grated pineapple with the peanuts and tomato sauce.

  6. Squeeze the juice from the lime into the mixture.

Cooking the Mussle Satays:

  1. Soak the mussles in water for around 20 minutes.

  2. Ground the garlic, the ginger, the sugar, the assam, and the salt very finely.

  3. Boil the mussles with the ground ingredients until the pan is dry. Be careful not to use too much water.

  4. Remove the mussles from their shells.

  5. Put a skewer through the mussles.

  6. Pre-heat the grill to a very high heat.

  7. Mix the vinegar with the soy sauce on a plate.

  8. Soak the mussles in soy sauce and vinegar mixture.

  9. Put the mussles (on the skewers) under the grill.

  10. Grill the mussles until they are browned (5-10 minutes).

  11. Serve with sweet and sour sauce.
