They  are   3   different   types  of  basil.

1. Purple basil or holy basil (baikaprown).
It has purple stem and leaves and has a 
hot flavor. They are used in stir-fires with 
all kind of meats which is popular for fast
food in Thailand. 

 

2. Lemon basil ( baimangluk ) It has a light green stem and leaves and has a lemony flavor. They are used in soup, salad, curries especially for the seafood dishes or make a drink like tea. I 

3. Sweet basil ( baihorapra ). It has dark green stem  and leaves and has an aniseed flavor. They can used in all types of dishes, It is also used for garnishing and often used for their color when making for green curry paste. This kind of basil are most commonly fraud abroad and can be used instead of purple and lemon basil.

Basil leaves need to removed from the stem and added at the last minute to keep their color look nice for the dishes. 

They can keep longer by wrapping with tissue paper and put into tightly plastic bag stored in the refrigerator, it will last for a week or can also be frozen.

Dried basil leaves need to soaked in the water for 5 minutes before using. Basil powder or mint can be used as a substitutes if the fresh ones are not available
