PRAWN AND CUCUMBER CURRY
Ingredients:
250 grames,peeled prawns
4 table spoon red curry paste
500ml coconut milk
1 tablespoon cooking oil
150 grames cucumber,cubed
1 teaspoon sugar
1 tablespoon fish sauce
chopped coriander for garnish
method:
Heat the oil in a large pot or wok.
Stir in in curry paste and fry for 30 seconds,
add the prawns and cook for 1-2 mins,
then gradually add the coconut milk,
and sugar and bring to a boil
Add fish sauce and the cucumbers.
Transfer to a serving dish and
serve garnished with coriander.
