FRUIT SALAD WITH GINGER SYRUP




Ingredients: 
1 inch ginger root,peeled and chopped 
1/4 cup of castor sugar 
150 ml of water 
grated rind and juice of one lime 
4 tbsp ginger wine
1 fresh pineapple,peeled cored and chopped  
2 ripe mangoes,chopped into bite-size 
4 kiwi fruits,peeled and sliced
1 papaya,deseeded and diced
1/4 fresh coconut,grated 
350 grams lychees,peeled and stoned
coconut or lychee icecream,to serve(optional)
method: 
P lace the ginger ,sugar,water and the lime juice
in a small pan and bring to a boil.Simmer for a minute, 
remove from het and let syrup cool slightly.
Add the ginger wine and mix well.Allow to cool. 
Place the fresh fruits in a serving bowl.
Add the cold syrup and mix well. 
Cover and chill for 2-3 hours.Sprinkle the grated  
coconut before serving with ice cream,of your choice.
