TOM KHA KAI
Ingredients:
500 grams chicken skinned and cut into pieces
3 cups coconut milk
1/2 cup galangal,thinly cut
50 grams,lemongrass,cut into pieces
3-4 pieces kaffir lime leaves
1/2 tsp salt
1 large onion,chopped
100 grams straw mushroom
1 tsp fried red chilles paste
2 tsp lemon juice
3 tablespoon fish sauce
1 stem corriander,finely chopped
method:
In a large pot bring to boil coconut milk,chicken,mushrooms and
onion,galangal,kaffir lime leaves,lemongrass and chille paste
Simmer till chicken is tender and remove from heat
Season with sauce and lemon juce.
Garnish with corriander leaves and serve hot.
