Munchkin Munchies Recipes

   

Lemonade

  • 1 cup lemon juice, freshly squeezed
  • 1/4 cup lime juice, freshly squeezed
  • 2 spoons - 1/2 cup Splenda
  • 1 quart water
  • Ice cubes
  • Lime slices
  • Fresh mint leaves

  1. Kids - mix lemon juice, lime juice, and 2 tablespoons Splenda in a big jug until the sugar is dissolved. Add the water, stir and taste - add more Splenda if necessary. Serve with ice cubes, lime slices, and mint
    Note: Substitute plain mineral or soda water to add "sparkle" to the drink.

    Macadamia and Peach Salsa with Grilled Chicken

    • 1/2 cup roasted, chopped macadamias
    • 1/2 cup diced peaches
    • 1/2 red onion, finely chopped
    • 2 tablespoons fresh cilantro, chopped
    • 1 teaspoon minced ginger
    • Freshly ground black pepper to taste
    • 1 double chicken breast, diced into cubes
    • Steamed broccoli, carrot, and peppers

    1. Adult - prepare all the ingredients
    2. Kids - Mix the nuts, peaches, onion, cilantro, ginger, pepper and chicken in a big bowl. Serve on a plate with some steamed vegetables

    Rock Cakes

    • 2 cups self-raising flour
    • 1/3 cup Splenda (can use real sugar if prefered)
    • 3 oz butter
    • 3 oz currants or small raisins
    • 1 oz chopped dried apricots
    • 1 egg
    • Pinch salt
    • 1/4 teaspoon cinnamon
    • About 1/3 cup whole milk

    1. Adult - grease baking sheet and preheat oven to 370F
    2. Kids - sift the dry ingredients together and rub in butter with fingertips until the mixture looks like breadcrumbs. Stir in dried fruit
    3. Adult - Beat the egg and add to the mixture. Pour in the milk as the kids stir. Ad just enough milk to form a moist but stiff dough. Too much milk will create soft biscuits
    4. Kids - use a dessertspoon and scoop out dollops of the mixture onto the baking sheet. Keep about an inch between them. Do not flatten - they should look like rocks
    5. Adult - bake in oven for 10-20 minutes until a toothpick inserted comes out clean. Loosen on the tray and leave to cool

    Vegi-burgers

    • 1/2 cup grated zucchini
    • 1/2 cup grated carrot
    • 1/2 cup grated pumpkin
    • 2 cups precooked brown rice
    • 2 tablespoons sweet chilli sauce
    • 1/2 cup breadcrumbs
    • 1 egg
    • 1/2 cup grated mozarella cheese

    1. Kids - mix all ingredients (except cheese) in a bowl. Scoop out 1/2 cup portions and roll into firm balls. Flatten slightly into patties. Sprinkle some cheese on top
    2. Adults - bake in a 480 degree Farenheit oven for 20-30 minutes
      Note: tastes wonderful served with salsa and grilled onions
