Munchkin Munchies

   

Snowman Pancakes

This is a fun breakfast that kids can make.

  1. Adult - Make pancakes, in small, medium, and large circles
  2. Kids - Arrange on plates to look like snowmen. Sprinkle liberally with powdered sugar. Use raisins, blueberries, strawberries, cherries to make eyes, nose, mouth, and buttons. Use sausage links or banana slices for arms

White Christmas from Australia

  • 3 cups puffed rice
  • 1 cup dried, mixed fruit
  • 1 cup desiccated coconut
  • 1 cup dry powdered milk
  • 3/4 cup of sifted icing sugar
  • 8 oz vegetable shortening
  • vanilla essence
  1. Kid - Mix the puffed rice, dried fruit, coconut, powdered milk, and icing sugar in a bowl
  2. Adult - Melt the shortening and mix through the dry ingredients
  3. Kid - Pack mixture into a baking dish and set in the fridge
  4. Adult - Cut into squares.

Eggnog Bread

  • 2 eggs
  • 1 cup sugar
  • 1 cup dairy eggnog
  • 1/2 cup butter, melted
  • 1/4 tsp nutmeg
  • 2 tsp rum essence or real dark rum
  • 1 tsp vanilla
  • 2 1/4 cup flour
  • 2 tsp baking powder
  1. Kid - beat eggs, then add sugar, eggnog, butter, rum, and vanilla and stir. Add flour, baking powder and nutmeg and stir until moistened. Pour into greased bread pan.
  2. Adult - bake at 350 degrees for 45-50 minutes or until toothpick comes out clean. Cool for 10 minutes and then tip onto rack to cool thoroughly before slicing.

Cranberry Punch

  • 2 cups cranberries
  • 2 cups water
  • 1 cup sugar
  • Juice of 3 lemons
  • Juice of 1 lime
  • 1 quart ginger ale
  • Red and green cherries
  1. Adult - cook first three ingredients until pulpy. Strain
  2. Kid - when pulp is cooled, add the remaining ingredients and stir. Add ice-cubes and serve

Apple Pecan Cake

  • 3 cups of flour
  • 3 large eggs
  • 2 tsp cinnamon
  • 2 tsp vanilla
  • 1 tsp baking soda
  • 3 cups apples, peeled and cubed
  • 1/2 cups butter, melted
  • 1 1/2 cups pecan halves
  • 1 cup golden raisins
  • 2 cups packed brown sugar
  • 1/2 tsp salt
  • 1 cup oil
  1. Kid - sift flour, cinnamon, baking soda, and salt together. Set aside. Mix oil, butter, sugar, eggs, and vanilla. Stir in dry ingredients to make a thick batter. Fold in apples, pecans and raisins.
  2. Adult - Bake in a buttered, floured, ring cake tin at 350 degrees for 1 1/4 hours. Cool in pan.

Santa's Balls

  • 1 lb hot sausage
  • 10 oz cheddar, grated
  • 3 cups Bisquick
  1. Kid - Mix all ingredients by hand in a large bowl, kneading thoroughly. Shape into small balls - about ping-pong ball sized
  2. Bake at 350 degrees for 30 minutes.

Trifle - a classic British dessert

  • 1 small can of mixed fruit
  • 1 small package of strawberry jello
  • 4 ladies fingers
  • Custard powder (to make a pint)
  • Pint of heavy whipping cream
  1. Kid - Drain the fruit and add enough water to the juice to make up 2 cups. Use to make the jello. Divide the ladies fingers into halves, lay in a serving dish and cover with the fruit. When the jello is cooled but not set firmly, pour gently over the fruit and let set
  2. Adult - Make custard according to package directions and let cool (stir periodically to prevent a skin forming
  3. Kid - When cooled pour over the jello and let set. Whip the cream and spoon over the custard.

Cherry Fluff

  • 1 can Cherry pie filling
  • 1 can Condensed Milk
  • 16 oz crushed pineaple, drained well
  • 12 oz can Cool Whip
  1. Kid - mix first three ingredients together. Fold in the Cool Whip and chill.

Ambrosia Punch

  • 2 1/2 quarts orange juice
  • 2 cups pineapple juice
  • 1 cup cream of coconut
  • 2 small oranges, thinly sliced and halved
  • 3 cups vanilla ice cream
  • 3 cups ginger ale
  • 1/2 cup flaked coconut, toasted
  1. Kid - Combine first 3 ingredients in a bowl. Arrange orange slices around the rim. Add small scoops of ice cream, then ginger ale, and then coconut sprinkled over the top.
