Munchkin Munchies Recipes

   

Banana Muffins

  • 3 large ripe bananas
  • 3/4 cup brown sugar
  • 1/2 cup applesauce
  • 2 large eggs
  • 3 tbsp low fat sour cream
  • 1 tsp baking soda
  • 1 & 3/4 cups whole wheat flour
  • 1/4 cup crunchy granola

  1. Kid - Mash the bananas with a fork, then stir in the sugar, eggs and applesauce.
  2. Kid - Mix the baking soda into the sour cream and as it becomes foamy, stir gently into the banana mixture. Add the flour and granola, stirring just enough to mix the ingredients. Spoon into prepared muffin pan
  3. Adult - Bake in a 375 degree oven for 10 -15 minutes until done (poke with a skewer - if it comes out dry they are cooked).

Choc-Chip Peanut Butter Cookies

  • 1 cup crunchy peanut butter
  • 1/2 cup fine sugar
  • 1/2 cup grated coconut
  • 1 lightly beaten egg
  • 1/2 cup chocolate chips

  1. Kid - Mix everything together. Use a soup spoon to scoop out portions and drop onto a greased cookie tray. Flatten slightly.
  2. Adult - Bake at 350 degrees until golden - about 15 minutes. Let stand 5 minutes and then cool on a wire rack.

Easy Scones

  • 1 cup whipping cream
  • 1 cup lemonade
  • 3 cups self-raising flour
  • 1 egg yolk - beaten

  1. Kid - Place flour in a bowl. Add the liquid and mix enough to combine. Roll out to an inch thick on a floured surface. Cut with cookie cutters into circles. Place on a greased cookie tray and lightly brush the tops with beaten egg yolk.
  2. Adult - Cook at 420 for 12 minutes (should sound hollow if the base is tapped with a knuckle).
    Variations - add 2/3 cup of grated cheese to the flour, or 1/2 cup of raisins, or 1/2 cup of chocolate chips before mixing in the liquid.

Muesli

  • 2 cups rolled oats
  • 1 tablespoon brown sugar
  • 1/2 cup golden raisins
  • 2 teaspoons bran
  • 1 cup dried apple - chopped
  • 1/3 cup banana chips
  • 1/2 cup dried mango - chopped
  • 1/2 cup dried papaya - chopped
  • 1/2 cup slivered almonds

  1. Kid - Mix everything together and place in an air-tight jar.
  2. Kid - Serve with milk!

Nachos
Makes 6 serves

  • 1/2 lb ground Italian-style turkey or lean beef
  • 1/4 cup chopped onion
  • 1/4 cup chopped red sweet pepper
  • 8 oz can red kidney beans, rinsed and drained
  • 1/3 cup chunky salsa
  • 6 cups tortilla chips
  • 2 cups shredded cheese
  • 1 pack Guacamole dip
  • 1/2 cup light sour cream
  • 4 green onions - diced
  • Few sprigs cilantro - chopped

  1. Adult - Mix meat, onion, and sweet pepper and saute until meat is browned. Drain well. Stir in beans and salsa and heat sauce through.
  2. Kid - Arrange 1 cup of chips on a microwave safe plate. Sprinkle with cheese and spoon some sauce evenly over the top. Sprinkle with more cheese.
  3. Adult - Microwave on high, uncovered, for 1-2 minutes until cheese melts.
  4. Kid - spoon guacamole and sour cream on top and sprinkle with green onions and cilantro
    Repeat with the remaining ingredients

Sunflower Slice

  • 2 cups oatmeal
  • 1/2 cup sunflower seeds
  • 1/4 cup cranberries or currants
  • 2/3 cup brown sugar
  • 1/2 cup butter - melted

  1. Kid - Mix oatmeal, berries, seeds, and sugar together. Stir in butter. Grease a baking tray and pour in the mixture. Press it firmly into place.
  2. Adult - Cook at 350 degrees for 25 minutes. Chill in fridge and slice into squares.
