Munchkin Munchies Recipes

   

Broccoli Salad

  • 1 cups of steamed broccoli (it should be bright green and a little crisp)
  • 1/4 cups raisins
  • 1 tbsp cups red onion, chopped
  • 1/8 cup walnuts
  • 5 slices cooked bacon, crumbled
  • 2 tsp. sugar
  • 3 tsp. cider vinegar
  • 1/3 cup low-fat mayonnaise

  1. Kid - stir broccoli, raisins, red onions, walnuts, and bacon in a bowl
  2. Kid - separately stir together sugar, vinegar, and mayonnaise and then pour over broccoli and toss to coat. Chill for 2 hours

Frozen Sunshine Pie

  • 1 8 or 9-inch graham cracker pie crust
  • 1 8-oz. can sweet condensed milk
  • 1 9-oz. container of cool whip
  • 1 12-oz. can frozen lemonade concentrate, thawed
  • Slivered almonds

  1. Mix thawed lemonade, cool whip, and condensed milk together. Pour into crust.
  2. Sprinkle with slivered almonds. Freeze for 1 hour. Serve.

Frozen Yoghurt Popsicles

  • 8 oz of flavored yoghurt
  • Small paper drinking cups and popsicle sticks

  1. Kid - almost fill the cups with yoghurt
  2. Adult - cover each cup in plastic wrap and poke a small slit in the center of each
  3. Kid - insert a popsicle stick into each cup of yoghurt and then place in the freezer until feozen solid

Fruit Dip

  • melon, cut into spears
  • firm bananas, cut into spears
  • apple slices

For dip:

  • 1 (10oz) package frozen raspberries - unsweetened, thawed
  • 1/2 C softned cream cheese, reduced fat
  • 1 C plain low fat yogurt
  • 2 tsp lemon juice
  • 2 tbsp. honey or sugar (or substitute)

  1. Arrange fruit spears on plate. In a blender puree raspberries (and their juice) until uniform. Add yogurt, lemon juice and honey and pulse until well combined.
  2. Transfer to serving bowl and serve with the fresh fruit slices.

Pretend Soup
Adapted from "Pretend Soup", by Mollie Katzen p. 35.

  • 2 C low sugar orange juice
  • 1/2 C low fat or fat free plain yogurt
  • 1 tbsp. honey
  • 2 tsp. lemon juice
  • 1 sm. banana, sliced
  • 1 C fresh berries (if substituting frozen, thaw first)
  • (other fruits may be added as well)

  1. In a bowl mix orange juice, yogurt, honey and lemon juice until well blended. In four seperate bowls put 5 banana slices and 2 tbsp berries.
  2. Ladle the liquid mixture over the fruit and eat!

Pretzels

  • 1 tbsp. yeast
  • 1/2 c. warm water
  • 1 tsp. honey
  • 1 1/3 c. flour
  • 1 tsp. salt

  1. Adult - preheat the oven to 325 degrees Fahrenheit.
  2. Kid - place the yeast in a small bowl and add the water and honey. Stir just a little and then leave for 5 minutes. Meanwhile, stir the flour and salt together.
  3. Adult - check on the yeast which should have increased in size and begun to bubble. Add it to the flour and stir with a spoon. When it gets a bit unwieldy, use your hands. When it is crumbly and flaky, it's ready.
  4. Kid - knead the dough on a board, as if it was clay. Break off a piece about the size of a super bouncy ball and roll into a snake. Twist it into a pretzel shape, and place on a greased cookie sheet. Do this with all the dough. You can brush the pretzels with a little beated egg yolk and the sprinkle with sesame seeds, fresh diced garlic, or parmesan cheese if you like.
  5. Bake the pretzels for 10 minutes.
