Munchkin Munchies Recipes

   

Chicken and Biscuit Kabobs
Makes 4 servings

  • 12 frozen pre-cooked, breaded chicken breast chunks
  • 6 refrigerated buttermilk or country biscuits
  • 1 medium zucchini and 1 yellow summer squash, cut into thick rounds
  • 2 tbsp butter, melted
  • 3 tbsp honey
  • 1 tbsp soy sauce

  1. Adult - preheat oven to 400 F and microwave chicken pieces 1 minute on high to defrost. Cut biscuits in half
  2. Kids - take the ingredients and divide them evenly between four plates. Take one plate and a wooden skewer. Thread a chicken piece, a biscuit, squash and zucchini onto the skewer, leaving a small gap between each piece - repeat until the plate is empty
  3. Kids - repeat this with the other three plates and three more skewers. Lay them on an ungreased baking sheet
  4. Adult - bake for 10 minutes until chicken is fully heatd and biscuits are golden
  5. Kids - mix the butter, honey, and soy together. Use a pastry brush to spread it over the kebabs and then serve

Chicken Pizza, Spicy
Makes 6 servings

  • 12 oz skinless, boneless chicken breasts, cut into thin strips
  • 2 tsp olive oil
  • 1/2 red onion, finely sliced
  • 1 red bell pepper, sliced thinly
  • 10 inch pizza base
  • 1/2 cup bottled mild garlic salsa
  • 2 oz shredded sharp cheddar cheese

  1. Adult - cook chicken until white. Set aside and sautee pepper and onion until tender
  2. Kids - cover the pizza base with the salsa. Layer the chicken and vegetables and sprinkle with the cheese
  3. Adult - bake in a 400 F oven about 15 minutes until cheese is melted and crust browned

Dessert Pizza
Makes 8 servings

  • 10 inch pizza base
  • 4 medium green apples, peeled and thinly sliced
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 5 dried apricots, diced

  1. Kids - Layer the apples over the pizza crust. Toss the apricots over the apples. Sprinkle the blended sugar and cinnamon over the fruit
  2. Cook 30 minutes at 425 F. Serve with a scoop of vanilla icecream

Hot Chocolate, Cinnamon with Marshmallows
Makes 4 cups

  • 3 cups nonfat milk
  • 1/4 teaspoon ground cinnamon
  • 5 oz bittersweet chocolate, chopped
  • 5 oz semisweet chocolate, chopped

  1. Kids - Mix milk and cinnamon in a saucepan
  2. Adult - Heat and bring to a simmer. Cover and remove from heat. Place chocolate in a saucepan and rest onside a second saucepan half-filled with simmering water. Let it melt, stirring regularly - do not allow water to splash it. When smooth, beat into the milk until creamy. Heat to drinking temperature if necessary and then pour into cups
  3. Kids - top the hot chocolate with mini-marshmallows

Pasta - Wheelie Salad
Makes 4 servings

  • 1 & 1/2 cups cooked wagon wheel pasta
  • 4 oz cooked lean ham (or other meat), cut into small pieces
  • 1 small green apple, cored, peeled and diced
  • 1/2 green onion, sliced
  • 2 tbsp low-fat honey-mustard or ranch dressing
  • 2 tbsp low-fat plain yoghurt
  • large sprig fresh basil, shredded
  • 3/4 cup cherry/grape tomatoes, halved

  1. Kids - toss pasta, meat, apple, and green onion in a bowl. In a small bowl, mix dressing, yoghurt, and basil and then pour over pasta dish. Stir and refrigerate minimum 2 hours. When ready to serve, stir in tomatoes

Smoothies, Blueberry
Makes 3 servings

  • 2 cups frozen blueberries, slightly thawed
  • 1 cup cold pineapple-fruit-blend or orange-fruit-blend juice
  • 8 oz vanilla low-fat yogurt
  • 1 tbsp Splenda

  1. Kids - dump all ingredients into the blender. Under adult supervision, put the lid on and blend for 2 minutes until almost smooth
  2. Adult - pour into glasses
